Heart-Healthy Salmon Loaf

Serves: 4Ingredients:
- 1 can Salmon
- 1 Carrot, shredded
- 1 Medium Onion, shredded
- 1/3 cup Fat-free Sour Cream
- 1/3 cup Lemon Juice
Steps:
- Drain salmon and put into medium bowl - bones too.
- Shred 1 medium-sized carrot and one medion onion. Add to salmon and mix thoroughly.
- Put into loaf pan. Pour lemon juice over loaf and bake at 350 degrees for 45 min. to an hour. Cut into 4 servings and serve.
- Note: My husband is on a low cholesterol diet (20g per day) and was told by his doctor to eat the cheapest salmon, bones and all, at least once a week for the omega oil. This is how I fix it.
