Heart-Healthy Salmon Loaf

Total preparation time:  15 minutes
Serves:  4

Ingredients:

  • 1 can Salmon
  • 1 Carrot, shredded
  • 1 Medium Onion, shredded
  • 1/3 cup Fat-free Sour Cream
  • 1/3 cup Lemon Juice

Steps:

  1. Drain salmon and put into medium bowl - bones too.
  2. Shred 1 medium-sized carrot and one medion onion. Add to salmon and mix thoroughly.
  3. Put into loaf pan. Pour lemon juice over loaf and bake at 350 degrees for 45 min. to an hour. Cut into 4 servings and serve.
  4. Note: My husband is on a low cholesterol diet (20g per day) and was told by his doctor to eat the cheapest salmon, bones and all, at least once a week for the omega oil. This is how I fix it.

Meet your hosts, John & Kathleen Panek. Kathleen bakes all the bread & does the cooking. John is the important member of this team, he cleans up the disaster area (after Kathleen is done) called the kitchen. Both are former motorcycle riders and history buffs. We look forward to meeting you.Breakfast is served in the dining room. This morning we are serving low fat gingerbread muffins and baked pineapple toast made with Kathleen's homemade bread and served with West Virginia maple syrup from the Sugar Shack in Preston County.
This is the Harris Room. Named for the family who purchased the house from the Gillum family and sold to the current owners, it reflects the "down-home" comfort and friendliness of the Harris family. This room with double bed features a reading nook with large rocking chair and an antique floor lamp.Mrs. Harris' then teen-aged granddaughter Rosemary occupied this room and wrote her loves on the walls so we referred to it as Rosi's Room. (They have been removed, sorry.) After spending the night in Rosi's Room in October,1996, Paul Gillum, the youngest Gillum child , informed us that he had been born in that room - in 1919. The lovely oak mantle, paintings by John Panek, and baskets by Kathleen add to the charm of this room with a double bed.
