Fresh Strawberry Crepes

Serves: 6Ingredients:
- 2 Eggs
- 1/2 cup Flour
- 1/8 teaspoon Salt
- 1 tablespoon Melted Butter
- 1/4 cup Milk
- 1/4 cup Water
- 3/4 tablespoon Sugar
- 1 teaspoon Vanilla
Steps:
- Whisk together crepe batter ingredients until smooth. Heat a crepe pan (or commercial crepe maker) until hot and pour about 1/4 cup batter in, rotating the batter to make a thin covering. Crepe is done when the edges turn brown.
- FILLING:
1 pkg. (8 oz.) cream cheese
1/4 c. butter, softened
1/4 c. powdered sugar
1 tbsp. milk
1 tbsp. dry sherry
1/2 tsp. vanilla
1 1/2 c. fresh sliced strawberries
- Combine filling ingredients except strawberries and fill crepes. Add strawberries in and on top of folded crepes and serve warm. Whipped cream should be offered with this dish.
