Individual Breakfast Souffles

Serves: 12Ingredients:
- 8 oz mushrooms - chopped
- 3 shallots large - chopped
- 8 oz ham diced
- 1 1/2 dozen egggs
- pinch tarragon - fresh
- 1 1/2 cups asiago cheese
Steps:
- Preheat overn to 400 degrees F.
Heat some olive oil in a 12-in nonstick skillet over moderately high heat until hot but not smoking, then saute filling with pepper to taste, stirring occasionally, until just tender, 4-5 minutes
- Whisk tarragon, sauteed filling, and 1 cup cheese into eggs. Divide mixture among 12 oiled ramekins.
- Put ramekins on a cookie sheet, and bake in the middle of the oven until the tops are puffed and set, about 20-25 minutes.
- Remove cookie sheet from oven, and turn on broiler. Sprinkle tops with remaining cheese, and broil until cheese is melted, about 1 minutes.
- Serve immediately
