Eggs Collingwood

Serves: 8Ingredients:
- 8 English Muffins
- 1/4 cup Parmesan Cheese
- 2 Sliced Potatoes
- 1/2 cup Sharp Cheddar
- 8 Eggs
- 1/4 cup Butter
- 2 Bartlett Pears
- 1/8 cup Cabernet WIne
- 2 Tomatoes
- 1 box Hollandaise Sauce Mix
- 3 tablespoon Chives
- dash Poppy Seeds
- dash Sesame Seeds
Steps:
- Slice muffins, put on cookie sheet and cover with parmesan and cheddar cheese. Place in pre-heated oven at 350 degrees.
- Boil potatoes, slice thin, put aside.
Slice pears, drench with wine and place next to muffins in oven.
- bring water to just below boiling point.
prepare hollandaise sauce.
remove muffins and top with sliced potatoes and pears.
- add eggs to water and poach.
place muffins on plate, top with poached egg and hollandaise sauce.
sprinkle with poppy and sesame seeds.
- top all with slice of tomatoe and a dash of fine chopped chives. Serve immediately with tempura vegetables or brioce.
