Hard Apple Cider Cake

Total preparation time:  1 1/2 hrs.
Serves:  12

Ingredients:

  • 6 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon nutmeg, grated
  • 1 cup butter, softened
  • 3 cups sugar
  • 4 eggs
  • 1 cup hard apple cider, B. F. Clyde's or local

Steps:

  1. In a bowl, mix together the flour, soda, salt and nutmeg and set aside.
  2. In an electric mixer, cream butter well, add sugar gradually, creaming until fluffy, then add eggs one at a time and beat thoroughly.
  3. On low or stir speed, add the flour mixture alternately with the cider, beating until smooth after each addition.
  4. Grease two loaf pans (or four smaller ones) and distribute batter evenly. Bake at 350 F for about one hour (gas oven may take 10 minutes longer) until an inserted toothpick comes out clean.
  5. Keep moist with a chunk of apple in the container. Freezes well. This recipe dates to the 1830s and is quite similar to pound cake.

The Denison Room, named for the original owner, has a queen canopy bed, fireplace and spacious private bath equipped with a jetted clawfoot tub.  Coffee, tea, hot chocolate and rolls are available every day beginning at 7:00 a.m.  A five-course breakfast is served on antique china in the dining room or on the patio.  We feature New England favorites such as Boston muffins, fresh baked Anadama bread, farm fresh eggs, baked ham, fresh fruit and homemade preserves.
The Noyes Room is named for the family who became the third owners of the house in the late 18th Century and continued to own it until 1936. The Noyes Room can be made up with either a king-sized bed or two twin beds depending on guest preference.  A private bath with tub/shower combination is immediately adjacent.  The Denison Room, spacious and romantic, with large ensuite bath.
The sitting room of the Russell Suite, a warm, gracious two room suite with ensuite bath.  This room is furnished with an antique twin sleigh bed, bureau and a 19th century inlaid desk.The Noyes Room, our brightest room, filled with sunshine -- boasts a king bed and private, adjacent bath.
