Peachy Pancakes: Breakfast-Brunch

Ingredients:

  • 1 1/4 cups flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 1 tablespoon sugar

  • 1/2 teaspoon baking soda

  • 1 egg - beaten

  • 1 cup buttermilk

  • 2 tablespoons salad oil

  • 1 Large Can of Peaches

  • 1/2 teaspoon cinnamon

  • 8 Strawberries - Fresh

  • 1/2 cup whipped cream ( fresh or canned )

Step 1:

Combine egg, milk and oil in bowl and set aside. Combine all dry ingredients together, and slowly stir into milk mixture until all flour is moistened. Don't over stir - batter will be lumpy. Set aside

Step 2:

In a microwave safe bowl combine one large can of sliced peaches in syrup. Add 1/2 teaspoon cinnamon. Warm in microwave approx 45 seconds.

Step 3:

Pour about 1/4 cup of pancake batter on a heated ungreased griddle. When underside is nicely browned turn and brown other side. Place pancakes on individual serving plates, and spoon the warm peach mixture over the top. Garnish with fresh strawberries and a little whipped cream.
