Americus Garden Inn's Potato and Pepper Jack Casserole

Serves: 6Ingredients:
- 3 cups frozen hash browns or potatoes O'Brien
- 3/4 cup shredded pepper jack cheese or combination
- 3 eggs
- 12 oz. can evaporated skim milk
Steps:
- Spray a 9 or 10" pie plate with Pam. Spread potatoes evenly over the bottom. Sprinkle cheese on top.
- Whisk eggs with evaporated milk. Pour over cheese and potatoes. Cover and refrigerate overnight.
- Bake at 350 degrees 40 - 45 minutes or until center appears set. Let stand 5 minutes before serving.
