Halcyon Farm Parmesan Potatoes

- 2 medium potatoes
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon flour
- 1/3 teaspoon salt
- 1/8 teaspoon black pepper
- 2 tablespoons melted butter
- 1/8 teaspoon paprika
Steps:
- Heat the oven to 425 degrees. Peel and cut potatoes into 8 wedges each. You should have about 2 cups or 1/2 lb.
- In a large bowl mix flour, cheese, salt and pepper thoroughly. Add potatoes and mix/toss the potatoes until coated. Remove the potatoes and place in another bowl. Reserve the cheese mixture.
- Melt butter on a regular sized jelly roll pan. Make sure the sheet is well coated and pour any excess butter onto the potatoes.
- Stir the potatoes to coat them well and then mix in the extra cheese mixture. Most of the cheese mix should stick well now.
- Place potatoes well-spaced on the buttered sheet, sprinkle with the paprika and bake at 425 degrees for 45-60 minutes.
