Broccoli Cornbread

Serves: 8Ingredients:
- 1/2 cup margarine, melted
- 1/2 teaspoon salt
- 1 large onion, chopped
- 10 oz. box chopped broccoli, thawed
- 1 box Jiffy Cornbread Mix
- 4 Eggs
- 1 can Mexican Corn
- 1 cup Cheddar Cheese, grated
Steps:
- Preheat oven to 425 degrees.
- Combine all ingredients and mix well.
- Pour into a 10" iron skillet and bake for 45 minutes.
- This dish is actually more of a casserole than a bread. It is a great side dish with barbeque.
