Lemon Soufflé Pancakes with Three Berry Syrup
Steps:
- 1 Cup King Arthur’s unbleached flour
¼ cup granulated sugar
1 Tablespoon of double acting baking powder
½ tsp baking soda
½ tsp salt
Zest of ¼ lemon
1 cup of buttermilk
¼ cup of canola oil
1 egg separated
1 tsp vanilla
2 Tablespoons of fresh lemon juice
- Whip the egg white into soft peaks.
Mix all of the dry ingredients together. Mix all of the wet ingredients except the egg whites(reserve until last).
Whisk the wet and dry together until there are no lumps. Gently fold in the whites.
Liberally butter the electric griddle and preheat at 350. Cook until golden brown.
- Three Berry Syrup
Using a frozen three berry mix (blueberries, raspberry, and strawberry) put one cup aside. Fresh can also be used, 1/3 cup of each to make a cup.
Bring ½ cup of water, 1 cup sugar and 1 Tablespoon karo syrup to a boil for three minutes. Add berries. Bring to a boil and turn off.
