STAGECOACH INN'S SPICED APPLE CAKE
Total preparation time: 30 min.
Serves: 8Ingredients:
- 1 1/4 cups vegetable oil
- 2 cups sugar
- 3 large eggs
- 2 3/4 cups all purpose flour
- 1/8 teaspoon allspice
- 2 3/4 teaspoon cinnamon
- 3/4 teaspoon salt
- 1 1/4 teaspoon baking soda
- 4 large cortland, road island greening, or granny smith apples
- 3/4 cup nuts (pecans or walnuts)
- 1/2 cup raisins
- 2 teaspoon pure vanilla extract
- whipped cream, vanilla ice cream, ot caramel sauce over cake
Steps:
- Pre-heat oven to 350 degrees. Cover inside of 12 cup bundt pan with small amount of vegetable oil (you may use a cooking spray).
DRY INGREDIENTS: Into a large bowl sift together flour, allspice, cinnamon, baking soda, and salt.
Peel and core apples. Slice into 1/2 inch pieces and set aside.
- CREAMED INGREDIENTS: With an electric mixer or large mixing spoon, mix until creamy: vegetable oil, sugar, and eggs
- With mixer or large spoon, gradually add dry ingredients to the creamed mixture. Mix just until smooth.
Add apples, nuts (optional), raisins, and vanilla to batter. Mix till evenly distributed throughout.
- Pour batter into the oiled bundt pan. Bake from 70 to 85 minuted or until a cake tester (toothpick will do) comes out clean from inserting in center of cake. Take cake from oven and cool slightly. Invert onto a wire rack. Allow to cool. Slice.
- Serve with a dollop of homemade whipped cream, vanilla ice cream, and/or home made or prepared caramel sauce. Yum yum.
