Yam Bran Muffins

Ingredients:

  • 1/2 cup cooked yam or sweet potato, mashed
  • 1/4 cup molasses
  • 1/2 cup sugar
  • 3 tablespoons vegetable oil
  • 1/4 cup chopped dates
  • 3/4 cup whole wheat flour
  • 3/4 cup unbleached flour
  • 2 cups wheat bran
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1 egg
  • 3/4 cup buttermilk

Steps:

  1. Combine first 5 ingredients in a large bowl.
  2. Add dry ingredients.
  3. Beat egg into buttermilk and add to other ingredients, stirring only until moistened.
  4. Spoon into greased muffin tin and bake at 375 degrees for 20 minutes. Makes 12 muffins.
