Yam Bran Muffins

Serves: 6Ingredients:
- 1/2 cup cooked yam or sweet potato, mashed
- 1/4 cup molasses
- 1/2 cup sugar
- 3 tablespoons vegetable oil
- 1/4 cup chopped dates
- 3/4 cup whole wheat flour
- 3/4 cup unbleached flour
- 2 cups wheat bran
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1 egg
- 3/4 cup buttermilk
Steps:
- Combine first 5 ingredients in a large bowl.
- Add dry ingredients.
- Beat egg into buttermilk and add to other ingredients, stirring only until moistened.
- Spoon into greased muffin tin and bake at 375 degrees for 20 minutes. Makes 12 muffins.
