Smoked Salmon or Veggie Omelet

- 7 Eggs, smoked salmon, sour cream/cream, chives
Steps:
- For 2 guests: Whip together 6-7 eggs and cream until light and airy.
- Melt butter in a saucepan and add eggs, continuing to tilt pan so runny part of eggs gets tipped under main body.
- Add ingredients requested by guests from chives to scallions, tomatoes, cheese, orange/red/yellow peppers, and the delicious smoked salmon until omelet is plump and tastey looking.
- Flip omelet over so it is now 1/2 the size of the pan.
- If the omelet is extra stuffed, place it in microwave oven for about 15-30 seconds so all eggs and ingredients are cooked. This makes for a beautiful finished product. Garnish with nasturtiums from the garden, a twist of orange and sour cream on the side. Yumm!
