Hungarian Plum Cake: Breakfast-Brunch

Prep time:20 minutes

Ingredients:

  • 1/2 cup butter

  • 1/2 cup sugar

  • 2 eggs

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon Almond Extract

  • 10 plums

  • 1 cup flour

  • 1/4 teaspoon salt

  • 1 teaspoon cinnamon (for topping)

  • 1/2 cup sugar (for topping)

Step 1:

Let hot water run in mixing bowl to heat and then dry. Put butter and cream in bowl. Add sugar and 1 egg. Beat well. Add second egg and beat well. Add flour, baking powder, and salt. Mix well and add almond extract. Spread batter into greased deep pie plate.

Step 2:

Cut plums in half and remove pits. DO NOT PEEL. Arrange in rows with skin side down. Press lightly into place. Sprinkle with topping.

Step 3:

Bake at 350 degrees for 30-40 min until golden brown.
