Shrimp, Sundried Tomato, Spinach & Red Pepper Pasta
Total preparation time: 15 minutes
Serves: 4Ingredients:
- 2 dozen Frozen or fresh Shrimp with tail off
- 2 Red peppers sliced into stips & cut into 1/2 inch size
- 1 Package of triple washed Spinach
- 1 Package of dried sun dried tomatoes
- 3 Garlic Cloves Minced
- 1 1/2 tablespoon Fresh Lemon Juice
- 1 tablespoon Olive Oil
- 1 lb Penne
Steps:
- Heat oil and garlic (1 tbsp)over low heat
- Add peppers, turn up heat to medium.
- After 2 minutes add sundried tomatoes (cut into small pieces and rehydrate)and saute approximately 5 minutes or until almost tender
- Add spinach, lemon juice and remaining garlic and saute until spinach is completely wilted.
- Add shrimp and cook for 3 minutes and toss with cooked penne
