Blackberry Wine Cake

Total preparation time:  60 minutes
Serves:  10

Ingredients:

  • 1 box white cake mix
  • 1 box raspberry jello
  • 1 cup blackberry wine
  • 4 eggs
  • 1 cup vegetable oil
  • 1 cup chopped nuts
  • 1 cup granulated sugar
  • 1/2 stick butter

Steps:

  1. CAKE Grease and flour a tube pan. Place nuts in bottom of pan. Mix 1/2 cup wine with cake mix, Jello, eggs, and oil. Pour this mixture over the nuts. Bake at 325 F for 50 minutes or until done.
  2. GLAZE Add 1/2 cup wine to sugar and butter. Bring to a boil. Pierce several deep holes in top of warm cake and pour on glaze. Turn cake out after slightly cooled.
  3. NOTE The taste of this cake improves after a day or two when stored at room temperature. It also freezes well.
