Lemon Curd Sauce

Serves: 8Ingredients:
- 1 cup butter
- 2 eggs
- 2 cups sugar
- 1 zest of whole lemon
- 1/2 cup water
- 6 tablespoons lemon juice/fresh
- 1 cup whipped cream
- 8 mint leaves
Steps:
- In a saucepan, melt butter over medium heat. Beat eggs well. Add ALL ingredients at once to butter(except whipped cream & leaves, these are for garnish).
- Stir constantly. Heat over medium heat for (5 minutes). Sould be gravy-like texture, Remove from heat.
- Bake waffles. Drizzle with sauce. Garnish with whipped cream, leaves, and twist of lemon slice. Enjoy!
