Lemon Curd Sauce

Total preparation time:  5 minutes
Serves:  8

Ingredients:

  • 1 cup butter
  • 2 eggs
  • 2 cups sugar
  • 1 zest of whole lemon
  • 1/2 cup water
  • 6 tablespoons lemon juice/fresh
  • 1 cup whipped cream
  • 8 mint leaves

Steps:

  1. In a saucepan, melt butter over medium heat. Beat eggs well. Add ALL ingredients at once to butter(except whipped cream & leaves, these are for garnish).
  2. Stir constantly. Heat over medium heat for (5 minutes). Sould be gravy-like texture, Remove from heat.
  3. Bake waffles. Drizzle with sauce. Garnish with whipped cream, leaves, and twist of lemon slice. Enjoy!

Breakfast sampler.  This is only one course at our table.  We offer Tex-Mex quiche, Alaskan Stratta, Berry Cream Crepes, Lemon Curd Sauce/Ginger Waffles, Three Cheese Omlets, Fresh Seafood Quiche, Beary Stack Pancakes/Saute'Banana,topped off with homemade berry sauce and whip cream....much much more.  All our entrees' come with a fine selection of meats.  We always start our breakfast off with fruit and yogurt/berry puree'.  Fresh hot homemade bread come out of our ovens each and every morning!  Juice, coffee, hot speciality teas will quinch your thurst.The picture doesn't do The Beary Romantic justice!  Walls of burgandy wine-senciled  golden fleur-de-lis'. Our hand-tied canopy comes from New England coast. The most luscious carpeting your little toes have ever stepped on. Carved oak saloon doors adorn the doorway to the private bath.
