Fresh Apple Coffeecake

Serves: 12Ingredients:
- 1 cup Sugar
- 3 eggs
- 2 cups flour
- 1 1/2 teaspoons baking powder
- 3/4 cup melted butter
- 1/2 cup milk
- 1 teaspoon vanilla
- 2 apples
- 1/4 cup Sugar
- 1 1/2 teaspoons cinnamon
Steps:
- Preheat oven to 375
Beat sugar & eggs in mixing bowl.
- In a separate bowl, toss flour & baking powder
- To sugar & egg mixture add:
1/3 flour, melted butter & mix;
Add another 1/3 flour & mix;
Add milk, vanilla, remaining flour & mix
- Peel & core 1 apple and chop in small pieces.
Gently fold in to batter.
Pour into prepared pan.
- Combine 1/4 c. sugar with cinnamon and pour over batter.
Core & cut second apple. Cut into chunks and place core-side-up on top of cake.
Bake 35-40 minutes at 375 degrees until toothpick inserted in center comes out clean.
Cool 10 minutes before serving.
