Sweet Potato Salad

Serves: 8Ingredients:
- 12 oz Bacon, crumbled
- 1 tablespoon Bacon Grease, reserved
- 1/2 bunch Scallions,sliced
- 1/4 cup Apple Cider Vinegar
- 1/3-1/2 cup Maple Syrup
- 1/4 cup Craisins
- 2 lb Sweet Potatoes, peeled, cubed and cooked
- 1/2 bunch Parsley, chopped
- 1/2 cup Pecans, toasted
Steps:
- Place 1 T. bacon fat back in sauce pan to melt. Add scallions and cook 2 minutes, until soft. Deglaze pan with apple cider vinegar and reduce by half. Add maple syrup and cook 2 minutes. Add craisins and bacon. Combine with sweet potatoes and parsley. Garnish with toasted pecans prior to service.
