Sweet Potato Salad: Salad

Ingredients:

  • 12 oz Bacon, crumbled

  • 1 tablespoon Bacon Grease, reserved

  • 1/2 bunch Scallions,sliced

  • 1/4 cup Apple Cider Vinegar

  • 1/3-1/2 cup Maple Syrup

  • 1/4 cup Craisins

  • 2 lb Sweet Potatoes, peeled, cubed and cooked

  • 1/2 bunch Parsley, chopped

  • 1/2 cup Pecans, toasted

Step 1:

Place 1 T. bacon fat back in sauce pan to melt. Add scallions and cook 2 minutes, until soft. Deglaze pan with apple cider vinegar and reduce by half. Add maple syrup and cook 2 minutes. Add craisins and bacon. Combine with sweet potatoes and parsley. Garnish with toasted pecans prior to service.
