Baked Eggs with Four Cheeses

- 8 Eggs
- 1 cup Half and half
- 2 teaspoon Sugar
- 1/2 lb Grated sharp cheddar cheese
- 1/2 lb Grated monterey jackcheese
- 4 oz Neufchatel, cubed
- 1 lb Cottage cheese, small curd
- 2/3 cup Butter, melted
- 1/2 cup Flour
- 1/2 teaspoon Baking powder
- 1/2 teaspoon Spike (or assorted herbs)
Steps:
- Beat together eggs, milk, and sugar. Add cheeses and melted butter and mix well.
- Mix in flour and baking powder.
- Pour into 3 quart baking dish sprayed with non-stick coating.
- Cover and refrigerate overnight.
- Bake 45-50 minutes at 350 degrees or until knife inserted in center comes out clean. Cut into rectangles.
