Ebelskivers
Total preparation time: 1 hour
Serves: 25Ingredients:
- 5 cups flour
- 1 tablespoon sugar
- 2 teaspoons salt
- 3 teaspoons baking powder
- 3 1/2 cups milk
- 1 1/2 cups half & half
- 6 eggs
Steps:
- Mix together dry ingredients in a bowl.
- Put milk, half & half, egg yolks into mixer and beat; slowly add dry ingredients. Keep beating until very smooth and glossy.
- Stiffly beat egg white. Fold into the batter.
- Preheat Ebelskiver pan over medium heat, with a teaspoon of oil in each cup. Once pan is hot pour batter into each cup. Fill to just below the top. As soon as batter has been poured into each cup start turning them. The key to turning them is to pour the uncooked batter out and set it back down forming a sphere. The last turn should pour out the last amount of batter and close up the hole.
They are done when a pick comes out clean.
- Notes: the full batch makes approximately 75 Ebelskivers.
A half batch would make approximately 38 Ebelskivers.
Serve with syrup or jam/jelly. Sausage makes a good side dish.
It takes about 20 minutes to prepare batter and about 40 minutes to cook the pancakes.
