Aunt Ethel's Bran Muffins

Total preparation time:  15 min.

Ingredients:

  • 2 cups Boiling water
  • 2 tablespoons Baking soda
  • 1 cup Shortening
  • 1 3/4 cups Sugar
  • 4 Eggs
  • 1 quart Buttermilk
  • 5 cups Unbleached white flour
  • 1 teaspoon Salt
  • 4 cups All-bran cereal
  • 2 cups 40% Bran flakes cereal
  • 2 1/2 cups Chopped dates
  • 1 cup Chopped walnuts

Steps:

  1. Mix water and soda. Let cool
  2. Cream shortening, sugar and eggs. Add buttermilk, flour, salt, and cereals and mix well. Stir in dates and walnuts.
  3. Store batter in an air-tight container in the refrigerator. Batter will keep up to six weeks.
  4. Bake as needed for 20 minutes in a 400 degree oven.
  5. My Aunt Ethel shared this recipe with me when I was a little girl, and I've never eaten bran muffins that tasted as good or were as moist as these. "These are not your Mother's bran muffins!" Ask me to serve these to you and see if you agree!
