Chile Verde Con Carne (Green Chile with Meat)
Ingredients:
- 1 Tenderloin or Top Sirloin
- 8 oz can of tomatoes
- 1 pinch oregano
- 2 cloves of garlic (minced)
- 2 teaspoons red chile powder (optional)
- 1 teaspoon cumin
- 1 diced onion
- 4-6 green chiles (peeled & dried)
- 1/2 cup beer or water
Steps:
- Cube up your meat into bite-size squares. Coat your skillet with some olive oil and brown the meat over high heat. Next, stir in tomatoes, chiles, onions, seasonings, and beer. Cover and simmer for 15 to 20 minutes. Serve with torillas and refried beans.
