  1 lb of Cod steamed & flaked with fork
  1 lb of Zucchini, peeled, and diced
  1 large onion
  1 large tomato
  2 cloves of garlic
  3 to 5 thin slices Jamaican Scotch Bonnet pepper
  3 tablespoons olive oil
  
  Steam zucchini and strain. Peel and slice onions in quarters, dice tomatoes and chop garlic finely.
  In saucepan, heat oil and sauté onion, garlic, and Scotch Bonnet pepper, then add diced tomatoes.
  Add fish. Add steamed zucchini. Stir and cook for another 5 minutes on low heat.
  
  Serve with fried green plantains, or wholegrain loaf as breakfast or light lunch.
  Or, add wholewheat pasta and have a delightful pasta meal.

• Cancellations:
  Room reservations must be secured by personal check or credit card for 50% of total amount due. Balance is due 21 days prior to arrival. We accept cash, travelers check or credit card. We guarantee a full refund with 3 weeks notice, less $50.00 processing fee. If canceling the reservations less than 21 days prior to reservation date, guests agree to be obligated for full room payment. While Quintessentials will make every reasonable effort to re-rent this room, the request and acceptance of a guaranteed room reservation constitutes a firm contract between guest and Quintessentials. Refunds will be made if room can be re-let, less a $35 processing fee.
