Christmas Bread

Total preparation time:  45 minutes
Serves:  12

Ingredients:

  • 1/2 cup sugar
  • 6 tablespoons butter
  • 1 egg
  • 3 1/2 cups flour
  • 2 packets yeast
  • 1/2 teaspoon salt
  • 2/3 cup water
  • 8 oz cream chees
  • 1 teaspoon grated lemon peel
  • 8 oz cottage cheese
  • 1 egg yoke
  • 1/2 cup sugar
  • 1/2 cup raisins

Steps:

  1. Combine sugar, yeast & 1 cup flour in large bowl. Heat butter & water till warm. Add to bowl and mix at low speed for 1 minute and medium speed for 2 minutes. Add egg & ¾ cup flour. Beat 2 more minutes. Stir in 1 ¼ cup flour. Knead 8 minutes adding ½ cup flour.
  2. Rise till double, punch down. Let rest 15 minutes. Shape into rectangle 15x12.
  3. To make filling, Blend together 8 oz cream cheese, 8 oz cottage cheese, ½ cup sugar, 1 tsp grated lemon peel, 1 egg yolk and ½ cup raisins. Chill while dough is raising.
  4. Scoop filling down center. On either side cut 1” strips. Crisscross over top. Let rise till double again. Brush with egg white (reserving yolk). Bake at 350 for 20 minutes.

The Guest House is located behing the main Inn near the golf course.  There are three Jacuzzi rooms available in the Guest House.
The Tuckernuck Room has a pineapple bed.  A wing back chair by the fireplace and antique radio cabinet.  A beveled glass French door leads out to the verandah.  This room faces North and in warm weather there is a great view of the sunrise from the verandah.
