Seafood Brochettes with Marinade


Serves:  6

Ingredients:

  • 6 medium shrimp, shelled with tails intact & deveined
  • 3/4 lb sea scallops
  • 1 dozen cherry tomatoes
  • 1 large green pepper, seeded, cut in 1" pieces, blanched
  • 1 medium onion, cut into 6 wedges
  • 1/2 lb fresh pineapple, cut into small wedges
  • 2/3 cup dry sherry
  • 1 1/2 tablespoon sesame seed oil
  • 1 1/2 tablespoon sesame seeds, crushed
  • 1 clove garlic, finely chopped
  • 1/4 teaspoon salt
  • freshly ground black pepper
  • 2 tablespoons fresh ginger, grated

Steps:

  1. Combine sherry, sesame seed oil and crushed seeds, garlic, salt, pepper and ginger in shallow bowl. Coat shrimp & scallops with marinade and let stand at room temperature for 30 minutes.
  2. Drain, reserving marinade. Thread shrimp and scallops on 6 skewers, alternating with vegetables and pineapple. Broil on grill 4 to 6 inches from heat for 8 to 10 minutes, or until shrimp & scallops are cooked.
  3. Turn several times and brush with reserved marinade.
