Seafood Brochettes with Marinade
Serves: 6Ingredients:
- 6 medium shrimp, shelled with tails intact & deveined
- 3/4 lb sea scallops
- 1 dozen cherry tomatoes
- 1 large green pepper, seeded, cut in 1" pieces, blanched
- 1 medium onion, cut into 6 wedges
- 1/2 lb fresh pineapple, cut into small wedges
- 2/3 cup dry sherry
- 1 1/2 tablespoon sesame seed oil
- 1 1/2 tablespoon sesame seeds, crushed
- 1 clove garlic, finely chopped
- 1/4 teaspoon salt
- freshly ground black pepper
- 2 tablespoons fresh ginger, grated
Steps:
- Combine sherry, sesame seed oil and crushed seeds, garlic, salt, pepper and ginger in shallow bowl. Coat shrimp & scallops with marinade and let stand at room temperature for 30 minutes.
- Drain, reserving marinade. Thread shrimp and scallops on 6 skewers, alternating with vegetables and pineapple. Broil on grill 4 to 6 inches from heat for 8 to 10 minutes, or until shrimp & scallops are cooked.
- Turn several times and brush with reserved marinade.
