Carrot & Brie Soup

Ingredients:

  • 3 quart Chicken Stock
  • 1 fl oz vegetable oil
  • 1 oz peeled and chopped fresh ginger
  • 1 clove garlic
  • 1 medium onion, peeled and chopped
  • 6 large carrots, peeled and chopped
  • 10 oz French Brie (outside removed)
  • some whipped whip cream
  • julienne of carrots (very fine strips)
  • finely chopped chives

Steps:

  1. Place pan on medium heat, add oil. Add garlic, onion, ginger and carrots and sweat them until onions are glazy. Add chicken stock, bring to a boil and simmer until carrots are done. Put in blender and puree for 3-5 minutes, return to heat, and bring to a boil again. Take 3/4 of the Brie, cut it up, and add it to the soup. Season with salt and pepper. Strain the soup.
  2. Serve with a soup plate, garnished with pieces of Brie alternating with julienne of carrots. In the middle place a tablespoon of whipped cream, topped with finely chopped chives.

The Hummingbird Room at Cobble House features a queen brass bed, two comfortable reclining chairs for reading or relaxing, a few plants and some small antiques. It overlooks the deck area and birdfeeders, and out across the lawn to the surrounding forest.
Hummingbirds hover on the walls and that wallpaper behind the bed is actually decorative painting! The room also has a small desk and chair. The spacious private ensuite bathroom has a jacuzzi and shower.“...a joy to be a guest here – great people, beautiful rooms and lovely surroundings...”
The Heron Room at Cobble House features a queen sleigh bed, as well as a futon which folds down into a double bed, so this room can accommodate up to four people comfortably. Cozy leather club chairs and heron pictures complete the decor. The room overlooks the area in front of the house, and deer wandering by or crossing the driveway are not uncommon. The compact private ensuite bathroom features a shower. The Jay Room at Cobble House features a king-size antique bed, or 2 twin-size beds (two night minimum to set up), and a comfortable sitting area in the bay window. The forest is right outside your window and from time to time you may see deer passing right by! British Columbia's official bird, the Steller's Jay, is perched on the walls. The room also comes equipped with a small antique desk and chair, while the private ensuite bathroom has a shower.
A full breakfast is served at Cobble House, between 7 and 9 a.m.  We start with a fresh fruit course, which may include yoghurt, and move on to a basket of baked goods, bread, or toast, followed by a hot entree, which varies daily.  Some of our popular dishes are spinach frittate, crepes with apple in a ginger apricot sauce, stuffed portobello mushrooms, brie and sundried tomato omelet, bread pudding.  It's a great way to start your day!
