BERRIES IN A CLOUD
3 egg whites 1 tsp vanilla ¼ tsp cream of tartar 1 cup granulated sugar ½ cup finely chopped almonds, toasted 1 3-oz package cream cheese, softened ½ cups packed brown sugar ½ cup unsweetened cocoa powder 2 tbsp milk ½ teaspoon vanilla 1 cup whipping cream 3 cups fresh whole strawberries, stems and caps removed 2 oz semisweet chocolate, cut up 2 tsp shortening
Let egg whites stand at room temperature for 30 minutes. Cover a baking sheet parchment paper. Draw a 9 inch circle on the paper; set aside.
In a large mixing bowl combine egg whites, 1 tsp vanilla, and cream of tartar. Beat with electric mixer on medium speed till soft peaks form. Gradually add granulated sugar, 1 tbsp at a time, beating on high speed till very stiff peaks form and sugar is almost dissolved. Fold in almonds. Spread over circle drawn on paper, building sides up taller than center to form a shell.
Bake in a 300 degree oven for 45 minutes. Turn off oven; let meringue dry in oven with door closed at least 1 hour (do not open oven door). Remove from oven. Lift Meringue and carefully peel off paper; transfer to a serving platter. (Or store in an airtight container overnight.)
For cocoa mousse, in a small mixing bowl beat cream cheese and brown sugar till smooth. Add cocoa powder, milk, and the ½ tsp vanilla; beat till smooth. In another chilled, small mixing bowl beat whipping cream with chilled beaters of an electric mixer on medium speed to soft peaks; fold into cocoa mixture.
Carefully spoon cocoa mousse into the meringue shell. Press whole berries, stem side down, into the mousse. In a heavy small sauce pan melt semisweet chocolate and shortening over low heat, stirring constantly. Drizzle over berries, filling and meringue. Serve immediately, or cover and chill filled meringue for up to 2 hours. To serve cut into wedges, dipping knife into water between cuts. Serves 10.

Take Route 29 north until the next exit, which will be Route 198. Take Route 108 West for 2.5 miles. We are on the left hand side of the road, just before Elliots Oak Rd. If youreach the Veternarian's, make a u-turn and go back a 100 yards! - Nearest major airport: BWI 12 miles

You will leave the airport on Route I95. Stay on it until you reach I-95 south. Exit onto I-95 South and continue for approximately 6 miles. Exit onto Route 175 West, and continue until you reach 29 north. Continue on 29 north until the next exit, which is 108 west. Take Route 108 for 2.5 miles. We are on the left. If you pass Elliots Oak Rd and the Veternarian, make a u-turn and go back a 100 yard!

We like to have our house filled with music, fun and stimulating discussion. David will regale you with our genealogy & Cynthia can share her experiences in designing Peralynna, basing it on a home she had lived in, in Europe. Our son, Brandon, was the builder of this 22,0000 sq. ft. building, at age 22. He was a child prodigy with no formal training, and impressed every inspector & engineer working with him, with his innate abilities, skills & decisive management style. We are still in awe! - The innkeepers speak: English, German, Japanese
