Curried Mango Sauce

Ingredients:

• 1 medium mango, chopped
• 1/3 cup peeled and chopped English cucumber
• 2 tablespoons olive oil
• 1 tablespoon fresh lime juice
• 1 teaspoon balsamic vinegar
• 1/4 teaspoon curry powder
• 1/4 teaspoon kosher salt
• 1/8 teaspoon freshly ground pepper

Steps:

1. Process all ingredients in a blender until smooth. Yield: 1 cup.
