Crunchy Pecan French Toast

Serves: 1Ingredients:
- 1 egg
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla
- 1/2 cup sugar
- 1 tablespoon melted butter
- 1/2 cup chopped pecans
- 1/2 cup crushed corn flakes
- 2 slices French or Italian bread, cut 3/4 inch thick
- sweetened strawberries or topping/syrup of choice
Steps:
- In a bowl, beat egg, nutmeg and cinnamon together. Add vanilla, sugar and melted butter, stir well; pour mixture into a shallow dish.
- Place pecans and corn flakes in separate shallow dishes. Dip bread slices into egg mixture on both sides then press into pecans and cornflakes, one on each side.
- On a griddle, melt butter and cook slices slowly over low heat for about 3 minutes per side or until golden brown. Serve with sweetened fruit topping or syrup of choice.
