Eggs Florentine
Total preparation time: 30 minutes
Serves: 4Ingredients:
- 2 Creamed Spinach/10 oz.
- 4 Ham slices
- 4 Eggs
- 1/3 cup Chopped Water Chestnuts
- 1/8 teaspoon Nutmeg
- 1/2 cup Swiss or Montary Jack
- 2 tablespoons Pimientos
Steps:
- Microwave spinach on high 5-6 minutes
- Grease small dishes and line with a ham slice, spread spinich over ham
- Make indentation in spinach, crack egg, place in spinich. Sprinkle with nutmeg
- Bake at 450 16-19 minutes or until egg is set. Remove and sprinkle cheese and pimientos over and return to oven 2 minutes or until cheese is melted.
Serve immediately
