Angel Eyes
Total preparation time: 30 minutes
Serves: 6Ingredients:
- 12 slices virginia baked ham
- 1 dozen large eggs
- 1/2 cup zuccinni, summer squash,red/green pepper, onion
- 1/2 stick butter
- 1/2 cup sour cream
- 1/2 teaspoon pepper
- 1 teaspoon fresh or dried tarragon
- vegtable spray
Steps:
- Pre heat oven to 375. Slice all of the vegatables small juilliene style
- melt butter in frying pan and saute vegtables until tender. About 5 minutes
- add sour cream, pepper and tarragon. Remove from heat.
- Spray a 12 cup muffin tin with vegtable spray. Place one slice of ham in each cup of muffin tin forming a small nest. Fill each ham nest with one tablespoon of vegtable mixture.
- Crack an egg into each one of the ham nests covering the vegtables. Sprinkle tarragon on the eggs and bake for 20-30 minutes depending on how you like your eggs cooked.
Remove from tin and serve with english muffins.
