Asparagus Strata
Steps:
We have always served this for Christmas morning with our family. I get to enjoy watching everyone open gifts while this bakes in the oven. It’s wonderful for a bridal brunch served with a salad or fresh fruit. Prepare it the night before so you can enjoy spending time with your guests. 1 lb. fresh cleaned asparagus 6 slices hearty whole wheat bread 2 ¼ cup shredded cheddar cheese 1 cup chopped (cubed ham) 5 eggs 2 Tbs instant minced onion ¾ tsp EACH dry mustard, Worcestershire sauce ¼ tsp EACH salt, garlic powder Dash of cayenne 1 ¾ cup milk Snap tough ends from the asparagus and cut into 1” pieces. Cook in boiling slated water until almost tender, drain, refresh and set aside. Lightly butter bottom and sides of an 11x7 baking dish. Trim crusts from bread slices and butter each piece. Fit into the prepared baking dish. Sprinkle 1 ½ cup cheddar cheese over the bread slices. Top with ham and asparagus pieces in an even layer.
In a large bowl, beat eggs lightly and add milk and dry ingredients. Mix well. Pour over the layered ingredients and allow to soak into bread. Cover and refrigerate overnight. The next morning, preheat oven to 350F. Remove pan from refrigerator and uncover. Bake 30 minutes. Sprinkle remaining ¾ cup cheddar cheese over the top and continue baking for 30 minutes or until the center is firm and cooked through. Insert the tip of a table knife into center of casserole. If the blade comes out clean, the strata is done. Allow to stand for 10 minutes before cutting into squares. Serves 6-8
