Raspberry-Chocolate Scones

Total preparation time:  1 hour
Serves:  8

Ingredients:

  • 2 cups flour
  • 2 teaspoons baking powder
  • 5 tablespoons sugar
  • 1/2 teaspoon salt
  • 6 tablespoons butter
  • 1 cup frozen raspberries
  • 3/4 cup chocolate chips
  • 2 eggs
  • 1/2 cup heavy cream
  • 1 tablespoon heavy cream

Steps:

  1. 1.preheat oven to 425 degrees, have large baking sheet ready, covered with parchment paper.
  2. 2.Mix flour,baking powder, salt, and 4 Tablespoons sugar into medium sized bowl. Add butter and work with fingertips until mixture resembles coarse crumbs.
  3. 3. Add frozen berries and chocolate chips, toss.
  4. 4. Make a well in flour mixture and add eggs (well beaten) and 1/2 cup cream. Mix with spatula until dough begins to clump together, then knead in bowl for about 30 seconds; do not overwork dough. Dough will be wet.
  5. 5.Pour dough onto parchment paper, with floured hands form into a round disk, 1 inch thick. using fingers or pastry brush cover with coating of cream, then sprinkle with remaining 1 Tablespoon of sugar. Cut into 8 pie shaped wedges (using floured knife). Bake in center of oven 12-15 minutes or until lightly browned. Serve warm with whipping cream or creme fraiche.

The Garden House building, built in the 1840's, is located just fifty feet west of the Main House.  Three beautiful guest rooms and our kitchen/dining rooms are housed here.Dixie Yates in her kitchen.  She has written a cookbook, "Yates House Favorites", and appeared in Southern Living, Midwest Living, USA Today, Sauce Magazine, 417 Magazine, Inside Columbia, and Rural Missouri.  Her breakfasts are renowned. She teams with partner and Chef, Mary Schlueter for cooking classes.
Our dining room seats twenty four people very comfortably and is available for small, catered events.Tasha Tudor Room:   This second floor room overlooks the historic residential district of Rocheport.  It is comfortably equipped with spacious tub/shower and pedistal sink bath, closet, antique furniture, upholstered chairs, and TV/DVD. High speed, wireless internet access is provided.
Valentine Room:     Also on the second floor,  this room has similar views and amenities as the Tasha Tudor Room.  Instead of Tasha Tudor signed prints, this room has a nice variety of antique valentines framed and displayed.
