Provencial Potatoes: Side Dish

Ingredients:

  • 5 large Potatoes

  • 1 medium Onion

  • 2 tablespoons crushed Garlic

  • 2 teaspoons Black Pepper

  • 2 teaspoons Seasoning Salt

  • 1 tablespoon Extra Virgin Olive Oil

  • 2 tablespoons Cooking Sherry

  • 2 tablespoons Sundried Tomato

  • 2 three inch sprigs Rosemary

Step 1:

Clean potatoes. Remove outside skin on onion. Dice onion and potatoes, leaving skins on. Place them in microwave-proof bowl and mix in garlic, pepper and salt. Put in microwave on high for 6-8 minutes. Stir and check for potato softness. The pototoes should be slightly crisp, but not crunchy.

Step 2:

Chop sundried tomatoes, and set aside.

Step 3:

Ten minutes prior to serving, place oil and sherry into fry pan. Add potato mixture and fry, stirring occasionally. Add in sundried tomato and rosemary. Fry for 5-10 minutes, until potatoes are soft, and well cooked.

Step 4:

Serve with ketchup, fresh salsa or tobassco.
