Oven Puffed Apple Pancake

Serves: 6Ingredients:
- 2 Apples (granny smith, gala, or whatever variety you like)
- 1/2 cup Butter
- 1/4 cup granulated sugar
- 2 teaspoons ground cinnamon
- 4 eggs
- 1 cup unbleached all purpose flour
- 1 cup milk
- 1 teaspoon vanilla extract
- powdered sugar
Steps:
- Preheat oven to 425 degrees farenheit.
Melt butter in a large shallow, oven-proof skillet (cast iron works well) over medium-high heat.
- Stir in sugar and cinnamon. Peel and core apples, slice thin and add to the skillet. Cook, stirring, until apples are translucent, about 5 minutes.
- In a large bowl beat eggs with an electric mixer until frothy. Add flour, milk, and vanilla. Beat until smooth.
- Pour batter over apples in skillet. Bake, uncovered, for 15 minutes or until puffy and golden. Cut into six wedges and served immediately, dusted with powdered sugar.
