Grilled Barbecue Lamb with Rosemary
Total preparation time: 25 minutes
Serves: 4Ingredients:
- Leg of lamb or 8 lamb chops
- Fresh rosemary sprigs (stalks removed)
- 1 Garlic clove crushed
- 2 teaspoons Blk pepper
- 1 teaspoon Balsamic vinegar
- 1 tablespoon Olive oil
- 1 dash Salt
- 1 tablespoon Dijon mustard
- 2 tablespoons Mint leaves (finely chopped)
- 5 tablespoons Lemon juice
- 1/3 cup Olive oil
- 1 dash Salt & Black pepper
Steps:
- Combine the garlic, pepper, vinegar, and oil in a bowl. Rub on both sides of the lamb. Cover & refrigerate for 30 minutes.
- For dressing, combine mustard, mint and lemon juice. Gradually whisk in oil to make a thick dressing. Add salt & pepper to taste.
- Grill leg of lamb or lamb chops for 3-5 minutes on each side for medium-well. Cook longer for thicker meat.
- Once cooked, drizzle dressing on top of lamb chops. There you have, Grilled barbecue lamb with Rosemary!
