Grilled Barbecue Lamb with Rosemary: Main Dish

Prep time:25 minutes

Ingredients:

  • Leg of lamb or 8 lamb chops

  • Fresh rosemary sprigs (stalks removed)

  • 1 Garlic clove crushed

  • 2 teaspoons Blk pepper

  • 1 teaspoon Balsamic vinegar

  • 1 tablespoon Olive oil

  • 1 dash Salt

  • 1 tablespoon Dijon mustard

  • 2 tablespoons Mint leaves (finely chopped)

  • 5 tablespoons Lemon juice

  • 1/3 cup Olive oil

  • 1 dash Salt & Black pepper

Step 1:

Combine the garlic, pepper, vinegar, and oil in a bowl. Rub on both sides of the lamb. Cover & refrigerate for 30 minutes.

Step 2:

For dressing, combine mustard, mint and lemon juice. Gradually whisk in oil to make a thick dressing. Add salt & pepper to taste.

Step 3:

Grill leg of lamb or lamb chops for 3-5 minutes on each side for medium-well. Cook longer for thicker meat.

Step 4:

Once cooked, drizzle dressing on top of lamb chops. There you have, Grilled barbecue lamb with Rosemary!
