Prickly Pear Jelly

We crown the desert summer with a Prickly Pear Harvest Weekend. In mid to late August we pick the ruby red fruit of the Prickly Pear cactus, then clean, cut and boil the fruit to make jelly.

Ingredients:

  • 2 1/2 cups Prickly Pear cactus juice
  • 1 3/4 cup powdered pectin
  • 3 tablespoons lime juice
  • 8-10 cinnamon redhots
  • 3 1/2 cups sugar
  • paraffin

Steps:

  1. Mix juice and powdered pectin, bring to a fast boil, stirring constantly. Add lime juice, redhots and sugar. Bring to hard boil, and cook for 3 minutes exactly at a rolling boil.
  2. Remove from heat, skim and pour into sterilized jelly glasses. Seal at once with 1/8 inch melted paraffin.
