Lemon Cream Waffles

Serves: 4Ingredients:
- 1 egg, room temperature and separated
- 1 cup flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1 tablespoon sugar
- 1 teaspoon lemon peel
- 2/3 cup cream
- 2 tablespoons fresh lemon juice
- 4 tablespoons butter, melted and cooled
Steps:
- Beat egg white in a small bowl until stiff; set aside.
- Mix together dry ingredients; set aside.
- Combine egg yolk, cream, lemon juice and butter. Add to dry ingedients, mixing until just blended.
- Fold in beaten egg white until just mixed, being careful not to overbeat.
- Bake on a preheated waffle iron about 5 minutes, until steaming stops. Garnish with whipped cream and lemon slices. Serve with real maple syrup.
