Blueberry Nut Bread

Total preparation time:  20 minutes
Serves:  8

Ingredients:

  • 1 1/4 cups Blueberries, fresh or frozen
  • 1 cup Whole Wheat Pastry Flour
  • 1 cup Unbleached White Flour
  • 1/4 teaspoon Salt
  • 1 1/2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1 Egg
  • 3/4 cup Honey
  • 2 tablespoons Butter, melted
  • 3/4 cup Orange Juice
  • 2 tablespoons Orange Peel, grated
  • 1 cup Walnuts, chopped

Steps:

  1. Butter and flour 9 x 5 inch loaf pan. Wash berries and dry well. Preheat oven to 350 degrees.
  2. Mix flours in bowl. Remove 1 tsp. flour and toss with berries. Add salt, baking powder, and soda to remaining flour. In large bowl with an electric mixer, beat egg and honey, then beat in butter and orange juice. On low speed, add dry ingredients. Remove mixer.
  3. Fold in orange peel, nuts and blueberries. Pour batter into loaf pan. Bake 1 hour until toothpick comes out dry. Bread will crack on top, showing off its berries. let cool 10 minutes in pan, but no longer, and remove from pan after loosening the edges with a knife.

Busy U-pickers come daily between June 15th & September 1st.
The bushes are loaded with sweet blueberries and everyone enjoys a handful or two while picking. Everyone finds that blueberry picking is good for the soul - it's very peaceful to be in the sunshine, enjoying the sounds of birds, and watching the chickens play in and out of the bushes.  
By the way, we have high bushes which make picking very
easy!Our welcoming sign is located at 17 Olde Noah Hunt Road.

If you are traveling West on 195, take Exit 16.
At light, make left turn onto 537 and go over 195. _Proceed to first traffic light (Pine Drive) which is between 
McDonald and WaWa.  Take right turn onto Pine - go one
mile and then turn right onto Olde Noah Hunt Road - go 
1 1/2 miles to Earth Friendly.

If you are traveling East on 195, take Exit 16A onto 537 to first traffic light (Pine Drive). Follow above directions.
