Barb's Savory Frittata: Breakfast-Brunch

Ingredients:

  • 8 medium potatoes (cubed)

  • 1 dozen large eggs

  • 1/4 cup cream, half & half or milk

  • 3/4 cup salsa

  • 1-2 tablespoons fresh chopped garlic

  • 2-3 tablespoons olive oil

  • 2 tablespoons chopped cilantro

  • salt & pepper to taste

Step 1:

In an ovenproof skillet, saute potatoes in olive oil with garlic and salsa; season with salt, pepper and cilantro. Beat eggs with cream. When potatoes are slightly browned, pour egg mixture over potatoes. Bake in oven at 400 degrees for approx. 25 minutes until top is firm. Serves 6-8.
