Applewood Morning Casserole
Total preparation time: 15 minutes
Serves: 6Ingredients:
- 2/3 cup chopped yellow and red peppers
- 1/2 cup asparagus cut into 3/4 inch pieces
- 3/4 cup thawed frozen hash brown potatoes
- 1/4 cup crumbled goat cheese
- 7 lightly beaten eggs
- 1/3 cup chopped mushrooms-optional
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon ground mustard
- 1 tablespoon dried chives
- 1/3 cup grated sharp cheddar cheese
Steps:
- Thaw hash browns and sprinke in botton of oiled 6x12 or 1.5 qt casserole dish
- Preheat oven to 375 degrees
- Saute veggies and mushrooms if used for about 5 minutes.
- Place veggies in casserole over hash browns. Sprinke goat cheese over veggies, beat the eggs and add seasonings. Pore the beaten eggs over the veggies. Top with cheddar cheese.
- Bake at 375 for 40 inumtes or until lightly browned and the eggs are set.
