Golden Dreams BISCOTTI

- 1/2 cup butter @ room temperature
- 3/4 cup sugar
- 2 large eggs
- 2 teaspoons grated orange zest
- 1 teaspoon vanilla extract
- 2 1/4 cups flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/3 cup cranberries
- 1/2 cup toasted hazelnuts or amonds
Steps:
- In a large bowl beat together butter, sugar and eggs. Add orange zest and vanilla.
- In medium bowl stir together flour, baking powder and salt until well mixed. Add dry ingredients to butter mixture and stir to form a dough. Stir in cranberries and nuts.
- Divide the dough in half and place each piece on baking sheet. Shape each piece of dought into a log approx, 3 inches wide and 10 inches long.
- Bake Biscotti at 350 degrees until light golden brown and fairly firm, about 20-25 minutes. Cool logs at least 10 minutes. Transfer logs to work surface and slice into
1 inch strips.
- Place biscotti back on baking sheet and bake at 300 degrees for approx. 8 minutes then turn and bake again for another 8 minutes until dry and crisp. Store in airtight container for weeks!
