Tahitian Waldorf Slaw with Dates & Walnuts

Serves: 2Ingredients:
- 1 Large banana, sliced
- 1 Large green apple, cored & cubed, unpeeled
- 1 Celery stick, sliced on the diagonal
- 1/4 cup Dried dates, chopped
- 1/8 cup Walnuts, chopped into chunks
- 1/4 cup Hellman's (or Best Foods) Mayonnaise
- 1 tablespoon Sour cream
- 1/2 teaspoon Lemon Juice (freshly-squeezed)
- 1 tablespoon Ginger (fresh) chopped
- 1/2 teaspoon Curry powder
- 4 Walnut halves for garnish
- 2 cups Fresh Baby Salad Greens
Steps:
- Mix all of the ingredients together (except walnut halves and salad greens)
- Put one cup of salad greens on each plate and arrange the mixture on top of the greens. Top with two walnut halves for garnish.
- Very elegant and easily prepared salad to accompany a meat or poultry entree.
