Super Easy, One Bowl Chocolate Cake

Total preparation time:  35 minutes
Serves:  8

Ingredients:

  • An odd recipe - no eggs, butter or cream - but vinegar!
  • Truly delicious, though, and quick & easy. Makes one 8" round.
  • Double the recipe to make a two layer round cake, or a 13x9 sheet.
  • 1 1/2 cup flour
  • 4 tablespoons cocoa
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 tablespoon vinegar
  • 5 tablespoons oil
  • 1 cup water

Steps:

  1. Preheat the oven to 350 degrees and grease an 8" round cake pan. Sift together flour, cocoa, and baking soda. (Yes, I hate to sift, too, but cocoa can be very lumpy.)
  2. Mix sugar and dry ingredients in a bowl, and add the liquid ingredients. Pour it into the cake pan and bake for 20-25 minutes - until a toothpick inserted in the middle comes out clean, or with damp crumbs, rather than wet batter.
  3. Let cool. Yes, that's really all there is to it - I told you it was quick, easy, and one bowl!
  4. I could eat this plain - and often do - but it's great with any kind of frosting you want, or just dusted with powdered sugar.
  5. I also sometimes play with the flavors - use coffee instead of water in the batter. Plain old distilled vinegar is fine, but I've also substituted red wine & cider vinegars in a pinch. Enjoy!
