Brunch Eggs

Serves: 4Ingredients:
- 4 Slices Ham or Canadian bacon
- 4 oz Shredded Swiss cheese
- 4 Eggs
- 4 tablespoons Heavy cream
- Salt & Pepper
- 4 oz Grated parmesan cheese
- Paprika
- 2 tablespoons Chopped Parsley
Steps:
- Butter 4 ramekins and place a layer of ham or Canadian bacon in the bottom of each. Sprinkle each with 1 oz of Swiss cheese. Break one egg over top of Swiss cheese, being careful not to break the yoke. Pour 1 teaspoon of heavy cream on top of each egg. Season with salt and pepper.
- Bake at 400F for 10 minutes.
Remove from oven and sprinkle with paprika and 1 tablespoon of grated parmesan on each egg.
Bake 5 additional minutes or until white is just set.
Remove from oven and allow to stand for 5 minutes.
Serve one ramekin per person, garnish with parsley before serving.
