Salsa Omelette: Breakfast-Brunch

Ingredients:

  • 1/2 cup mild salsa

  • 1 cup shredded Monterey Jack cheese

  • 1 cup shredded Cheddar cheese

  • 8 eggs

  • 1/2 cup small curd cottage cheese

  • 1/2 cup sour cream

Step 1:

Spray an 8 inch pie pan with nonstick cooking spray. Spread the salsa over the bottom of the pie pan; sprinkle the Monterey Jack and Cheddar cheeses on top.

Step 2:

In a medium bowl, whip together the eggs, cottage chees, and sour cream. Pour the egg mixture over the cheese.

Step 3:

Bake in 350 degree oven for 45 minutes, or until the egg is lightly browned and puffy on top. Serve with cilantro as garnish.
