Cappuchino Chip Muffins

Serves: 12Ingredients:
- 2 cups flour
- 3/4 cup sugar
- 1 tablespoon baking powder
- 2 teaspoons instant espresso coffee powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup milk
- 1/2 cup buter
- 1 egg, lightly beaten
- 1 teaspoon vanilla
- 3/4 cup semi-sweet mini chocolate chips
Steps:
- Preheat oven to 350 degrees. Grease 12 large muffin tins.
In large bowl, stir together flour, sugar, baking powder, espresso coffee powder, salt, and cinnamon. In separate bowl, stir together milk, butter, egg, and vanilla until blended. Ad milk mixture to dry ingredients and stir to combine. Mix in chips.
- Spoon batter into prepared muffin cups. Bake 20 minutes or until top springs when touched lightly. Remove from muffin tin and cool on wire rack. Serve with Chocolate Cream Cheese Espresso Spread (recipe below).
