Pumpkin Pancakes from Run of the River

Total preparation time:  20 minutes
Serves:  12

Ingredients:

  • 1 1/3 cups Milk
  • 4 tablespoons butter or margarine, melted
  • 4 tablespoons molasses
  • 2 eggs
  • 1/3 cup all purpose flour
  • 2/3 cup whole wheat flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts
  • 1 cup mashed cooked pumpkin

Steps:

  1. In a large bowl, lightly beat together milk, butter, molasses, and egg. In a separate bowl, sift together flours, baking powder and salt. Add nuts and pumpkin to dry ingredients. Add to wet ingredients and mix just until blended. If necessary, add milk to make batter the consistency of whipping cream.
  2. Heat griddle, and oil if necessary. Pour ΒΌ cup batter onto hot griddle. Sprinkle with a handful of granola. Flip when bubbles form on surface. Cook on other side until golden brown.

The Osprey Suite features a spacious deck with indredible views of the refuge and the Enchantments, the cluster of peaks in the near distance.  Fireplace, jacuzzi, "play loft" and incredible bath set the tone for relaxation.All logs and rock with an enormous wraparound deck to view the Cascades, the Great Northwest is an easy choice!
Your suite's bathroom features heated slate floors, walk-in shower with rainshower heads and ample room for lighting and mirrors.
