Caramel Apple French Toast

At the Whitegate Inn, we serve the Caramel Apple French toast with hot syrup and Canadian bacon. We usually serve it every Sunday. Our guests just love it and ask for it, and are disappointed if we serve something different, sooo every Sunday it is our signature Sunday Breakfast.

Ingredients:

• 1 cup brown sugar
• 1/2 cup butter
• 2 tablespoons light corn syrup
• 1 cup chopped pecans
• 1 dozen slices sweet French bread
• 8 thinly sliced green apples
• 6 eggs
• 1 3/4 cups milk
• 1 teaspoon vanilla
• Cinnamon & nutmeg

Steps:

1. Cook brown sugar, butter & corn syrup over a medium heat until thickened stirring constantly. Pour into a 9 by 13 glass baking dish (spray with Pam first).
2. Sprinkle with the pecans. Place one layer of bread slices. Top with the sliced apples.
3. Combine in blender the eggs, milk, vanilla and pour mixture over first layer.
4. Place a second layer of sliced bread on top of apples and cover with remaining egg and mild mixture. Cover with plastic wrap and refrigerate overnight. Sprinkle with cinnamon and nutmeg and bake uncovered for 40 to 50 minutes at 350 degrees. Each person is served 1 double layer serving. I can also be served with whipped cream.
